Cinnamon Roll Oat Bake

Oat Bake:

  • 1 pack 100 calorie Better Oats
  • 45g pumpkin puree
  • 100g egg whites
  • 1/4 cup water
  • 17g vanilla protein powder- I used HAPI
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/2 tsp baking powder
  • 1 tsp zero calorie sweetener

Icing:

  • 21g whipped cream cheese
  • 5g vanilla protein powder
  • Splash of water

Combine oats with dry ingredients then mix in water, pumpkin, and egg whites. Pour mixture into a microwave safe dish sprayed with cooking spray, then microwave for 3-4 minutes. Mine was done in 3:15. When it’s done, it’ll have a cake like texture.

For the icing, combine whipped cream cheese, protein powder and a splash of water. You can add more water for a less thick consistency.

Spread icing over oat bake and add a sprinkle of cinnamon. I like to drizzle some sugar free syrup on top as well.

These are prep friendly and reheat well.
